Inspired by nature, this cocktail is light, fresh, and beautifully clean in character. At its core is Ukrainian Spirit Classic. Sparkling birch sap brings natural softness and delicate effervescence, while linden blossom adds subtle floral notes and thyme highlights the drink’s earthy, botanical profile. The result is a refreshing highball that tastes as natural as the crisp air of a spring forest.

Ingredients:

  • Ukrainian Spirit Classic (linden infusion) — 50 ml
  • Thyme syrup — 20 ml
  • Clarified lemon juice — 20 ml
  • Sparkling birch sap or soda water — 100–120 ml

Preparation of Ingredients:

Linden Infusion:
Add 2 tablespoons of dried linden blossom to 500 ml of Ukrainian Spirit Classic and leave to infuse.

Thyme Syrup:
Combine water and sugar in a 1:1 ratio and heat gently. Add a bunch of fresh thyme and leave to infuse for 2–3 hours, then strain.

Clarified Lemon Juice:
Dissolve 6 g of citric acid in 100 ml of water to create bright acidity without cloudiness.

Sparkling Birch Sap:
Pour the birch sap into a soda siphon and charge with a CO₂ cartridge.

How to Prepare:
Fill a glass with ice. Add the linden-infused Ukrainian Spirit Classic, thyme syrup, and clarified lemon juice. Top with sparkling birch sap or soda water and stir gently. Garnish with a sprig of fresh thyme.
